Two beers for the price of one. This video takes the house Mexican lager recipe — a proven favorite — and attempts to clone it with 100% gluten-free ingredients: Grouse pale millet malt, flaked corn, and Ondea Pro and Ceremix Clex enzymes doing the conversion work through a rising step mash. Along the way there's a useful bit of labeling law: in the United States a beer made with barley can never be labeled gluten-free, even when treated with Clarity Ferm — it has to be brewed from actually gluten-free ingredients.
The side-by-side tasting at the end delivers the twist: the gluten-free version wins. More balanced, better hop expression, and good enough that it might permanently retire the original barley-based recipe.
