The 2025 experiment kicks off with the house entry and the boldest pick of the year: Griffin malt, a gluten-free malt made from millet, dropped into the shared amber ale recipe at a full two pounds — several times what most participants used, precisely because such an unusual malt deserved a real audition.

Griffin brings unexpected dark fruit — raisin and prune notes that would feel right at home in a much bigger beer. The video includes a keg-versus-bottle comparison (the keg wins on conditioning) and lands on a verdict every specialty malt review should aspire to: probably not the malt for an amber ale, but it would be outstanding in a barley wine — and a gluten-free barley wine with this malt is now on the brewing calendar.
