Carolina Biscuit — 2025 Malt Experiment #6

Matt from Wrecked Brewery chose biscuit malt from Carolina Malt House, whose spec sheet promises the flavor of "the bottom underside of a cookie" — and remarkably, that is exactly what both reviewers tasted, independently, on camera. Grain first, malt in the middle, hops arriving in the aftertaste.

The malt impressed enough to earn immediate recipe plans: it would be an interesting addition to a helles, playing the honeyed-bread role melanoidin usually gets. Between the spot-on cookie flavor and a rapidly emptying glass, this ranks among the most memorable entries in the series.
